The sake chosen for this charity bottle is an unblended sake from Saburomaru Distillery, distilled in 2020 using inland peat. Aged for three years and five months in Bourbon barrels, this single cask single malt Japanese whisky was bottled in 2024 at a strength of 61%. Saburomaru Distillery's signature flavor is a single malt with a noticeable peaty taste. Although the three-year age period may not seem long, the finished product has a composition that fully showcases its uniqueness, a delicate texture, and a mildly bitter aroma. Furthermore, this edition is distinguished by a pronounced smokiness that pervades the finish due to the use of malt manufactured with inland Scottish peat instead of Islay peat. A powerful smokiness emanating from the top notes is the scent of this release. Earthy and smoky malt aromas blend with citrus notes evocative of grapefruit and lemon peel. Tastes of delicate malt sweetness on the mouth, subsequently followed by a powerful smokiness and bitterness from the peat, all mingled with the same citrus scent. With hints of lemon cotton and burnt straw, the finish is strong and peaty, with a fiery spirit that enters the body through the throat and lingers in the center. Wakatsuru Sake Brewery and Saburomaru Distillery introduced and launched the Saburomaru Noto Charity Bottle Single Cask 2024 on January 9th, and on January 16th, a press release was released to raise funds for those affected of the Noto Peninsula Earthquake. Hoping that this subtle yet potent flavor would encourage the fastest recovery, bring joy to the devastated areas, and conveysincere sympathies to all those impacted by the tragic event. The label features a picture of the Noto Peninsula's Mitsuke Island. It's a well-known location that serves as a symbol of Noto and was reportedly destroyed by the most recent earthquake. The picture of those days and the risingsunis captured in the Noto Charity Bottle to express the wish to recover.
