Ontake Distillery is an awe-inspiring estate set amidst the serene heights of the Satsuma Peninsula at 400 meters above sea level. Referring to the three peaks of Sakurajima volcano Kitadake, Nakadake, and Minamidake, the name Ontake is a symbol of pride for the people of Kagoshima and a reflection of the distillery’s commitment to excellence.
Dedicated to perfecting a high-end single malt, the site was designed from the ground up for purity and precision. Pristine local spring water, clear wort, long fermentations and bespoke Miyake stills with upward-angled lyne arms produce a clean and delicately aromatic spirit. Every detail of the Ontake Distillery’s design, materials and equipment reflects an uncompromising pursuit of quality.

Ontake offers something completely unique in its whisky estate. Cask owners gain access to an exclusive on-site 18-hole golf course, a luxury hotel (opening 2026), fine-dining and a natural onsen discovered after drilling nearly 1,000 meters beneath the property.

Behind Ontake stands Nishi Shuzo, a producer of award-winning shōchū and sake with a history that stretches back to 1845. Nearly two centuries of fermentation and distillation expertise now inform every drop of Ontake whisky.
To CEO Yoichiro Nishi, even the slightest misstep could tarnish the reputation of his family’s esteemed legacy, which is why quality is never compromised.
Head Distiller Yasuaki Makishi and his team have worked meticulously to refine a new-make spirit of exceptional delicacy and character. They believe that the quality of any whisky is determined by the quality of the new-make.

Ontake’s commitment to excellence extends into the cask, inspired by the great houses of Scotland and Spain. Being a long time fan of Macallan, Yoichiro Nishi selected rare first-fill ex-Solera Oloroso sherry butts as the foundation of Ontake’s style.
Each cask imparts richness and depth, creating a whisky that is both complex and beautifully pure, with a pristine character that shines through in every sip.
