
As dekantā celebrates 11 years of sharing Japanese whisky with the world, we are releasing the 11th cask ever filled at Kiyokawa Distillery - Marsala Cask #ML11.
Kiyokawa The Cask Collector's Edition is a rare convergence of milestones, a bottle that marks the start of dekantā’s second decade alongside one of the earliest chapters of Japan's first farm-to-bottle distillery.
It's also the first Japanese single malt to be matured entirely in an ex-Marsala cask.
The Next Step in the Journey
Following on from their superb first release - The Cask First Edition - Kiyokawa's Iiyama Mountain Farm Distillery is excited to introduce their second bottling to their growing fanbase around the world. This unique, Marsala matured Collector's Edition was bottled specially for dekanta's 11th Anniversary and breaks new ground in the world of Japanese whisky as the first expression fully matured in an ex-Marsala cask. The liquid is a beautiful deep mahogany color and holds an outstanding depth of flavor within. The bottle comes inside a gorgeous wooden box, handcrafted from Walnut.
Crafted Without Compromise
Kiyokawa Distillery stands apart not only through its program of homegrown barely, but also through its deliberate use of Italian engineering and a pride that leaves no room for compromise. Unlike the rapid cycles of large-scale commercial distilleries, Kiyokawa allows fermentation to run for up to eight days, roughly four times longer than the industry standard.
This extended process, conducted in beautiful Italian-made Garbellotto wooden fermentors, extracts a profound depth of flavor and complexity from the grain.The spirit is then distilled in Italian Frilli stills, believed to be the only ones of their kind used for whisky in Japan. This specific equipment retains a richer profile of congeners, creating a complex spirit that is distinctly bold and textured.
Sicily Meets Iiyama
Founder David Troiano's Italian heritage is woven into the fabric of Kiyokawa. For our 11th Anniversary release, we selected a whisky matured in one of the distillery's carefully sourced Marsala casks from Sicily.
Marsala is one of Italy's most historic fortified wines, produced in the region surrounding its namesake port city in western Sicily. First exported commercially in 1773 when English merchant John Woodhouse recognised its potential and began fortifying it for sea travel, Marsala would go on to rival Sherry and Port as one of Europe's great trading wines.
The cask selected for this release was sourced from a traditional In Perpetuum system, where wine is continuously refreshed over many years in a process similar to the Solera method used for Sherry. Having matured Marsala for six to eight years before being filled with whisky, these casks develop a rich, nutty complexity that makes them particularly prized for maturation.
The ex-Marsala wood imparts layers of dried fruit, walnut and orange peel, perfectly balancing the rich malt with notes of burnt sugar, spice and a savoury umami depth. Bottled at 54% ABV without chill filtration or added colour, the liquid remains true to the cask.
