Produced by Mutemuka Sake Brewery in Kōchi Prefecture, this chestnut-based shōchū blends local chestnuts (50%), barley, rice, and rice kōji. It is distilled using otsurui (single pot distillation) which helps preserve the rich aroma and character of the ingredients.

The name “Hiburi” refers to the traditional torch-fishing method on the Shimanto River (where flaming torches drive fish into nets); “Daba” denotes a resting spot where people gather. Together, the name evokes local heritage and tradition.

It's praised for offering a remarkably smooth mouthfeel with a roasted chestnut aroma and hints of citrus sweetness.
