Dabada Hiburi (ダバダ火振) is a rare Japanese honkaku chestnut shochu (kuri shochu) produced by Mutemuka Distillery in Kōchi Prefecture. It is made from Japanese chestnuts (kuri, ~50% of the base) blended with barley, rice and rice kōji, then distilled to a nutty, softly sweet spirit.

The name means "fire-swinging" — a reference to the traditional Kōchi practice of catching sweetfish (ayu) at night with torches on the Shimanto River. Bottled at 25% ABV in 900 ml, this is a Japan-domestic bottle sourced by dekantā in Japan and held in our Tokyo store.
