Ontake Distillery is set high in the serene landscape of the Satsuma Peninsula, 400 metres above sea level. Named after the three peaks of Sakurajima volcano, Kitadake, Nakadake and Minamidake, Ontake reflects a deep sense of pride in Kagoshima and a clear commitment to excellence.

Designed from the ground up to produce a high-end single malt, every element of the distillery is focused on purity and precision. Pristine local spring water, clear wort and long fermentations are paired with bespoke Miyake stills with upward-angled lyne arms, producing a clean and delicately aromatic spirit. Which is then primarily matured in rare ex-Solera sherry butts, a decision inspired by Macallan.

Behind the distillery stands Nishi Shuzo, a producer of award-winning shōchū and sake since 1845. This depth of experience informs every stage of production, with Head Distiller Yasuaki Makishi refining a new-make spirit defined by delicacy and character. At Ontake, the quality of the whisky begins with the quality of the spirit.

Ontake offers a cask ownership experience unlike any other. Owners gain access to an exclusive on-site 18-hole golf course, a luxury hotel, fine dining and a natural onsen discovered nearly 1,000 metres beneath the estate.

Each visit offers a direct connection to the place that shapes the whisky, from the landscape to the craft behind it. As CEO Yoichiro Nishi puts it, “Where a spirit is born gives it meaning. We want people to experience the place that shapes our whisky.”

This commitment continues into maturation. Inspired by the great houses of Scotland and Spain, Ontake’s spirit is primarily aged in rare first-fill ex-Solera Oloroso sherry butts, selected by Nishi-san. These casks bring richness and depth while preserving a sense of clarity, resulting in a whisky that is both complex and precise.

In just a few years, Ontake has established an impressive record on the international whisky stage. Its most significant achievement came in 2026, when Single Cask Strength No.18 received the Highest Gold at the Tokyo Whisky & Spirits Competition before going on to win both the Best Category Award and the Japan Grand Prix, placing it at the very top of the competition.

The release also received Gold at the San Francisco World Spirits Competition, adding to a growing list of international recognition for Ontake’s whiskies.

Ontake Distillery sits around 400 metres above sea level in the mountains of Kagoshima, in southern Kyushu, overlooking Kinko Bay and Sakurajima volcano. Kagoshima is a region shaped by its volcanic landscape and warm climate, with fertile soils supporting an agricultural culture built around sweet potatoes, tea, citrus and livestock.

Sakurajima is not simply a landmark here: people have lived and farmed alongside the active volcano for thousands of years, adapting to its eruptions and making use of what the rich landscape provides. That relationship with the land is part of Kagoshima's character, a region known for its strong local identity and distinctive food and culture. Ontake sits within this landscape, surrounded by mountains and woodland, with the climate, water and environment of Kagoshima forming a fundamental part of the whisky's character.

Ownership is formalised with official documentation, confirming your rights while the cask is stored in a bonded warehouse at the distillery in Japan. Importantly, dekantā holds no ownership stake in your cask. They act solely as a facilitator and manager throughout the process.

This means you have full control over your asset, including the ability to:

  • Decide when to bottle your whisky
  • Receive samples and track its development
  • Visit your cask at the distillery
  • Transfer or sell ownership (subject to regulations)
Who looks after my cask?

Your cask is cared for by the distillery team in Japan, who are responsible for its storage, monitoring, and maturation over time.

While you remain the legal owner, the cask stays in a bonded warehouse at the distillery, where it is maintained under optimal ageing conditions. The distillery’s expertise ensures your whisky develops as intended, with careful oversight throughout its maturation.

Through Dekantā, the process is fully managed on your behalf. dekantā acts as your point of contact. Coordinating with the distillery, handling documentation, and arranging anything from samples to visits.
