Farm to bottle

Producing whisky entirely from farm to bottle is a serious challenge, especially in Iiyama’s extreme climate where conventional strains of barley struggle to survive. In response, Kiyokawa worked closely with the Institute of Agriculture and local farmers to develop a unique strain of barley suited to these conditions, while retaining the qualities required for whisky production.

Planted in autumn, this barley withstands heavy snowfall and continues to grow beneath it, emerging in spring as the thaw begins. It is a rare breakthrough in cultivation, and this strain remains exclusive to Kiyokawa.

With each passing year the crop grows stronger and more abundant, its uniform shape and rich green colour a clear sign of a grain that is flourishing. It is the foundation of Kiyokawa’s identity as a true farm-to-bottle distillery.

Japan’s Hometown

Situated in the mountains of Iiyama in Nagano Prefecture, known locally as “Japan’s Hometown”, Kiyokawa is surrounded by some of Japan’s most untouched natural scenery. Here, rich malted barley and pure mountain spring water are transformed into whisky that matures through sharply defined seasons, exposed to dramatic shifts in temperature and atmospheric pressure, often within a single day.

This environment drives a more intense interaction between spirit and cask, deepening both flavour and natural colour. Maturation is led by Oloroso and Marsala casks, alongside a growing range that includes PX Sherry and ex-Rye Bourbon.

Among the most distinctive are the Orange Marmalade casks, traditional fortified-wine barrels conditioned with natural preserve, reflecting Kiyokawa’s ongoing exploration of character and flavour.

Kiyokawa’s stillhouse, built from wood and set against the mountain landscape, is home to two custom copper stills, Moritaro and Morihime, created in Italy by Frilli. Together they shape a spirit defined by depth, elegance and clarity, balancing texture with refined aromatics through carefully controlled distillation and an ethos of never cutting corners.

This attention to detail extends across the entire process. Kiyokawa holds ISO 22000 certification, a rare standard in Japanese whisky, ensuring precision and integrity from cultivation through to bottling.

Kiyokawa’s releases have already showcased the versatility of its spirit, including ex-Pedro Ximénez and ex-Marsala expressions. Both have been met with huge enthusiasm. An early indication of the character and quality emerging from the distillery.

Kiyokawa's Iiyama Mountain Farm Distillery is in the mountains in the north of Nagano Prefecture, in one of Japan's major snow country regions. Winters here bring heavy snowfall, while summers can be hot, creating a pronounced cycle of seasons that follows the whisky through the year.

The climate is closely connected to Kiyokawa's approach to whisky. The distillery is part of an agricultural operation that grows its own barley, including a distinctive mountain barley developed specifically for the conditions of snow country. The same rural setting also provides the clean mountain water used in production, while the changing seasons shape the environment in which the spirit matures.
