Heritage & Revival

The story of Hanyu Distillery begins with the Akuto family, whose involvement in Japanese spirits dates back to the 16th century. In 1941, 19th-generation head Isouji Akuto established the distillery, marking the family’s move into whisky production.

After decades of operation, Hanyu closed in 2000. In 2004, Ichiro Akuto repurchased the remaining stocks, preserving the distillery’s legacy through what would become some of the most revered releases in modern Japanese whisky.

In 2021, Toa Shuzo revived Hanyu on its original site, returning production to its historic home.

Production

Production at Hanyu is defined by continuity and precision. The original pot stills have been recreated by MIYAKE Industries using archival blueprints, ensuring close alignment with the distillery’s historic spirit character.

Distillation is overseen by Hideto Shimazaki, the distillery’s General Manager and Master Distiller, who worked at Hanyu prior to its closure and provides a direct link to the original operation.

The spirit is matured in a range of casks, with a focus on bourbon and Sherry, including Palo Cortado, Oloroso and Pedro Ximénez. 

Production remains deliberately small in scale, allowing for close attention at each stage of the process.

Some 25 years after the last Hanyu was bottled, the distillery has once again released whisky to the market in the form of Hanyu: Genesis.

Matured in first-fill bourbon casks and bottled at 51% ABV and limited to 2,021 bottles, it has already achieved widespread acclaim from critics and enthusiasts alike.

Today, Hanyu Distillery continues to build on its legacy through measured production, careful cask selection and a commitment to quality.

Location/provenance

Hanyu Distillery is located in the northern part of Saitama Prefecture, surrounded by the farmland and waterways of the Tone River basin. Saitama sits directly north of Tokyo, but much of its northern landscape remains distinctly rural, with rivers and open countryside defining the area around Hanyu.

The region offers a different perspective on Japan from the mountainous landscapes of many whisky-producing areas. The flat countryside around Hanyu is particularly attractive in spring and summer, while the wider prefecture is known for its mountains, forests and extensive opportunities for hiking and other outdoor activities.

For visitors to Hanyu, the location offers an interesting contrast: a historic whisky distillery in a rural agricultural setting, yet within easy reach of Tokyo.

Whisky cask ownership is the purchase of an entire barrel (cask) of whisky directly from a distillery, typically while the spirit is still maturing.

With dekantā, this means you own a specific cask stored in a bonded warehouse in Japan, under the supervision of the same distillery that produced it. As the legal owner, you hold the rights to that cask and the whisky inside it.

In practical terms, cask ownership offers:

Do I fully own the cask?

Ownership is formalised with official documentation, confirming your rights while the cask is stored in a bonded warehouse at the distillery in Japan. Importantly, dekantā holds no ownership stake in your cask. They act solely as a facilitator and manager throughout the process.

This means you have full control over your asset, including the ability to:

  • Decide when to bottle your whisky
  • Receive samples and track its development
  • Visit your cask at the distillery
  • Transfer or sell ownership (subject to regulations)
Who looks after my cask?

Your cask is cared for by the distillery team in Japan, who are responsible for its storage, monitoring, and maturation over time.

While you remain the legal owner, the cask stays in a bonded warehouse at the distillery, where it is maintained under optimal ageing conditions. The distillery’s expertise ensures your whisky develops as intended, with careful oversight throughout its maturation.

Through Dekantā, the process is fully managed on your behalf. dekantā acts as your point of contact. Coordinating with the distillery, handling documentation, and arranging anything from samples to visits.

In short, the distillery looks after the whisky, while dekantā looks after the ownership experience. Ensuring everything runs smoothly from purchase through to bottling.

Can I visit my cask in Japan?

Yes and for many clients, this becomes one of the most rewarding parts of cask ownership.

Through dekantā, you can arrange visits to the distillery where your cask is stored, offering a rare opportunity to step inside the world of Japanese whisky production. These visits go far beyond a standard tour.

You’ll have the chance to meet the master distiller and their team, gain insight into their craft, and most importantly, draw a sample directly from your own cask, tasting your whisky as it evolves in real time.

Many owners choose to make this a yearly pilgrimage to Japan.
