This unique Hinomaru release is a product of Kiuchi Brewing and Distilling Inc., distilled in 2021 at Yasato Distillery, at the base of Mount Tsukuba. After being matured for 23 months in Bourbon barrels, this expression was bottled with an alcohol strength of 48%. The Kiuchi Sake Brewery is situated in the Ibaraki Prefecture's Naka. Like many other Japanese breweries, Kiuchi Brewery was founded in 1823 as a sake brewery and only made its first beer investments in 1996. It has persisted in embracing the challenge of creating unique sake. The company makes craft beer called "Hitachino Nest Beer" in addition to sake, shochu, wine, and liqueurs. Their goal was to make Japanese whisky known around the world, which was exclusively made by Kiuchi Sake Brewery. The Yasato Distillery was built with the intention of exploring the production of Japanese whisky based in the Yasato area of Ishioka City, Ibaraki Prefecture, at the eastern base of Mount Tsukuba. Due to its huge temperature differential between day and night and minimal yearly rainfall, the region is used to harvest premium crops. The copious, excellent quality spring water from Mount Tsukuba and the climate are the sources of Kiuchi Brewery's whisky.
